Hi Anna,

I have used extracts, such as peppermint extract and vanilla extract, that contained alcohol.

I used such a small amount, it never occurred to me that it might be a problem.

I believe that there are a few recipes in the thread, Delicious Ideas for Your Dining Enjoyment/Recipes 2018/2017/2016, that contain an extract. Maybe you can take a look at some of the baking recipes and get an idea of what might be good to use.

You might have to go to page 2 of the forum to find that thread, or just search "recipes" using the Search Engine link at the top of the page, under the snow covered mountains.

I agree that the glycerin extracts don't taste as good.

Hello Forum,

I was talking to my sister on the phone today, and she asked me why I can't use extracts with alcohol for baking and cooking since the alcohol cooks out when it's heated/cooked. I wanted to check to get your opinion as to whether or not it should be avoided or if it's okay so long as the alcohol is cooked out. If it's okay to use, that would be great because then I can use more flavorings for keto recipes like ice cream. There are the extracts that have glycerin instead of alcohol, but I think this might convert to sugar in the body, I'm not sure. Regardless I find that they are not as good as the kind with alcohol.
