Hi Janell and Cate,
I'm so enjoying your recipes. Thank you for posting them! I have a request for your frosting recipe and smoothies that you say your daughter uses to pour into popsicle molds.

Earlier on, I had purchased some coconut wraps, but at that time it seemed to give my crawlies energy. I think it's time to try them again. It will provide a way to have sandwiches with grilled chicken, lettuce, tomatoes, avocado, or even egg salad or tuna salad.

I tried zoodles (zucchini noodles) at a local restararaunt and didn't have an issue with increases crawling (which is very minimal most of the time now). So, I think I may be able to tolerate coconut better, too. It's funny that the coconut milk /cream wouldnt bother me but the coconut meat did. Go figure. I used to love opening up a coconut and drinking the water and eating the coconut "meat". Hope I can enjoy that again now.

One last question, regarding the chocolate zucchini bread, how much stevia, liquid or powder, do you recommend. When you'all say "to taste" I'm not sure if it is around a quarter tsp or 4 tsp so an idea of what it may be close to would be really helpful for someone less experienced with stevia like myself.

Hi All!! And a special welcome to newbie, Cate. :)) I have been drawn to your postings here on Food for Thought. So happy to see you realize how healing food can be. Food is our medicine!! As I started my journey with Morgellons, I too had some of the very same questions you have expressed. I remember thinking whether Stevia was a good choice to be using in our diets. I reached out to John B with the very same question about stevia, and his answer was the same to me two years ago as is his current response to you! Thank you John B for taking time to help so many on our road to recovery! :)))


The diet section on our website is truly amazing! So many delicious recipes to try and enjoy. I was chuckling while reading your last post, Cate on trying the Avocado Coconut ice cream. This was my daughter's favorite dessert during the first summer of morgellons. She would make it herself everyday, using our VITAMIX. LOVE, LOVE, LOVE, our vitamix. We have had ours for 14 years now!! Not kidding, she would make it everyday.....I remember being so thankful she was able to enjoy something since all her favorite foods had been taken away. :) She still enjoys making her ice cream, but we now have a Cuisinart ice cream maker...love it too! And since we are further along in our protocol, she makes some pretty amazing ice cream flavors now. Something for you to look forward to, Cate. :)) Oh and yes, she also makes frozen popsicles with her ice cream and smoothies. Found some all steel ones for her to use so we don't have to worry about the toxicity of freezing food in plastic.


Another quick sweet tooth fix for me, in the beginning and still to this day, is shredded, unsweetened coconut. Love it!! Coconut contains antibacterial, antiviral, antifungal, and anti parasitic healing properties. YUM YUM too!! I will just grab a handful out of my jar and eat away. It's also good with a handful of almonds. ::))

As our family present this Christmas, we purchased a dehydrator. Have to admit, we have only used it once to dry out Stevia that my husband planted in the garden.....so once again, I connected with another idea from your post, Cate!! You have motivated me to start using the dehydrator more, and to look for recipes to get it rolling.

Thank you for letting me know you liked the Power Bar recipe. This, and the Cacao almond joy bars, were my husband's favorites for a long time. And you can definitely place Vanilla protein powder into the power bars. I have found you can put protein power in anything to increase the protein content. There is even unflavored protein powder too. Thank you for bringing this to everyone's attention! We have treasured the frosting in our household too. So much in fact, we make frosting and keep in jars to eat when ever. I now put Cacao powder in with the frosting for a wonderful chocolate taste. We are HUGE chocolate fans in my house, so I have discovered Cacao is an amazing product!!

So welcome, Cate. Can't wait to hear all your favorite recipes you are going to discover!

Thanks, John. -:) I'm going to look into a dehydrator, because it seems like a good option for making tortillas. I actually just recently was given a Ninja power blender, which I just started using, and love. It's great, I've started making nut butters (almond, pecan, walnut, etc). I'm happy, because it's saving money, and I didn't realize how it tastes so much better when you make it yourself. I'm going to try to make some smoothies, too!

What you mentioned about Stevia makes me feel better about using it. I wasn't sure. My health food store has another alternative, Xylitol, but I think it is a sugar alcohol, which doesn't sound as good to me.

I just made the Coconut Avocado Ice Cream on the site today (delicious!), and added some liquid stevia to it....it is very sweet, it seems like a little goes a long way, but the ice cream tastes so-o good with it, I feel excited that I have a nice frozen treat all ready to go in my freezer, now, for the warmer weather....I may even try varying the flavor with maple or almond extract in my next batch, or freezing the Coconut ice cream in some popsicle molds, for Coconut frozen fruit bars.

It's good to find so many "cleaner eating" recipes that are good alternatives to what I used to eat. It makes me feel like upgrading my diet isn't really such a big of a sacrifice ~ the options are huge. It seems like a lot of people, in general, are switching to Anti-Candida or Paleo, because of gluten or yeast sensitivities to over processed foods...maybe this site is ahead of the game!
