Consumed by stress, fear and unknowing- because of that I began losing more weight then I could afford(which wasn't much.) After talking with Mel, listening in on all the Conference calls and reading through all of posts I learned to accept what I was up against, ready or not I was empowered and my battle plan was drawn. I began planning, writing lists and grouping beneficial foods together in a notebook. That made my shopping trips much more beneficial, I was no longer wandering around aimlessly looking at all the things I couldn't have. I had a set, strategic focus. As a vegetarian-this is what my weekly shopping list consists of: First and foremost, Organic Produce. AVOCADO(Packed full of Omega-3/Omega-6 fatty acid, protein and vitamins/minerals. I highly recommend buying and eating as much of it as possible! It has helped me out a lot with keeping my weight) KALE TOMATOES ONIONS GREEN ONIONS GARLIC CUCUMBERS BROCCOLI VARIOUS PEPPERS GINGER SQUASH ect.. I tend to cook around all of these with every meal. My list also consists of: EGGS BROWN RICE and BROWN RICE PASTA ALMONDS BEANS TEA (Herbal) ALMOND MILK (I have also discovered ALMOND CHEESE. You won't find any Cholesterol, GMO's, Lactose, Saturated Fat or Preservatives in the 'Lisanatti' Brand-I'm not sure of anyone else here has tried it or would recommend it-the label does say it contains Expeller-Pressed Canola oil so I do use it sparingly and I've noticed no ill affects to speak of thus far.) I have also found 'Lundberg' BROWN RICE CHIPS, they are delicious not to mention USDA Certified Organic! KIND products offer a lot of great Fruit & Nut Bars as well as Granola. Just be sure to keep a look out for the sugar content in some of their products! I buy the 'Healthy Grains Maple Walnut Clusters with Chia and Quinoa' It offers 300 mg Omega-3 and it is Gluten and GMO Free, plus it has no Refined sugar. It works great with the Almond Milk for a quick breakfast and just as well on it's own as a snack. I just stick with the serving size. I hope this general outline helps get you started, Lisa! I will be posting much more soon :) For now I will leave you with one of my favorite Stuffed Bell Pepper recipes! Avocado-stuffed Bell Peppers WHAT YOU'LL NEED: About 2 cups of Brown Rice 4 large green Bell Peppers 1 large Onion, diced 1 Jalapeno, diced (optional) 1 Avocado, diced 1-2 cloves of Garlic, diced 1/2 tsp. Olive Oil 1/2 tsp. Oregano (or other preferred seasoning) Sea Salt and fresh ground Black Pepper to taste 1/4 cup grated Almond Cheese TO START:I learned this trick of barely slicing off the bottom of the bell pepper to make a flat spot for the pepper to stand on, after that cut off a fairly generous amount of the stem end of the pepper, because you'll be chopping that up to add to the stuffing mixture. Then remove seeds and stand the peppers up in a baking dish you've lightly coated with olive oil. I only used about a third of the Jalapeno- diced it up, combined that with fresh garlic, the left over diced bell peppers, and onions then sautéed it all in olive oil and seasoned it (even added about a tablespoon of homemade salsa in the process) before combining it with the (cooked) Brown Rice. After it's all mixed up you just stuff the peppers and bake them in the oven (375 degrees) for 30 minutes. Then I took a spoon and made some room in the center of the pepper and packed in the diced avocado, topped it all with salsa, a little left over rice and the almond cheese and baked it for about 8-10 more minutes. There are MANY different ways to make Stuffed Peppers, so feel free to have fun with it and make it your own! Most of all, enjoy! |
