It is a nice alternative to the high carb snacks out there. It is high in protein, and excellent way to get spices/nutrients, for those who are modifying their diet. Spiced Nuts Ingredients 2/3 cup almonds 2/3 cup pecans 2/3 cup walnuts 1 teaspoon chili powder 1/2 teaspoon cumin 1/2 teaspoon ground black pepper 1/2 teaspoon celtic sea salt 1 tablespoon olive oil Directions 1. Place nuts in a large cast-iron skillet over medium heat 2. Toast until lightly browned 3. While nuts are toasting, prepare spice mixture 4. Combine chili, cumin, black pepper and salt in a small bowl 5. Coat nuts with olive oil, then coat with spice mixture 6. Serve |

mary 11/15/2015 10:39:57 AM MST | Pumpkin Chicken Chili courtesy of www.CivilizedCavemanCooking.com Prep time 20 mins Cook time 40 mins Total time 1 hour Serves: 10 Ingredients •3 lbs of chicken, cubed •3 cups organic pumpkin puree •2 cups bell pepper, diced •2 cups of red onion, diced •3 jalapeños, diced, seeds optional •1 cup chicken stock •28 ounces organic tomatoes with their juice, diced •6 ounces organic tomato paste •1 cloves of garlic, minced •3 tbsp chili powder •2 tbsp pumpkin pie spice •2 tbsp fresh cilantro, diced •1 tbsp cocoa powder •1 tsp ground coriander •1/2 tsp sea salt •1 whole cinnamon stick •2 tbsp coconut oil Instructions 1.Heat your coconut oil in a dutch oven over medium heat 2.Saute your onions until lightly browned, then add your bell peppers, jalapenos, and garlic and saute for another 5 minutes 3.Add in your chicken, chicken stock, organic tomatoes, organic tomato paste, chili powder, pumpkin pie spice, coriander, salt, and cinnamon stick and simmer for 20 minutes 4.Stir in your pumpkin, cilantro, and cocoa powder and cook for an additional 5 minutes 5.Reduce heat to low and let sit until ready to serve or serve immediately 6.Enjoy and if there is too much, you can freeze it and eat later on in the week |
