Cassie,
Try substituting Brown rice for cauliflower rice.
You can also make flat breads with ground seeds, or ground lentils, even ground quinoa.
You can make almond flour crackers! You can make kale chips instead of potato chips.
There are even recipes here for hamburger buns, no less! :-) Cauliflower is a great potato substitute.
Substitute high carb foods with cruciferous vegetables, which you can eat freely.
So many fantastic recipe ideas here, even sweet treats! Almond butter will be your best friend :-)
