Diana,

Some good, safe options are coconut and almond flour. Not sure on how to use them, just download a conversion table off of Google and that will help you with your baking!

Dear Diane,

I don't know a lot about Cassava flour but I did look it up and it is like a yam or potato which we cannot have. One cup of Cassava flour has 110 grams of carbs and only 5 grams of fiber. That leaves 105 in carbs.

You might not eat a whole cup in a baked item, but 1/4 cup would be 26 grams. Half of that would be13 grams. Since it is best to stay around 30 carbs a day, for all meals, I don't think it would be wise.

However, maybe someone has other info. on it that I don't know about. We'll see if any others chime in!! Thanks for trying to find an alternative!! Right now, I stick to Almond flour and Coconut flour. And, I don't use too much of those!
