Three Minute “Red Lobster” Cheddar Biscuits in a Mug


I got this recipe off of Youtube from Keto Connection. I LOVE their videos...the couple have great recipes and are so informative. I'm sharing it here with adjustments for our dietary requirements. They were really good!

As I've mentioned in another recipe I moved to the children's section, when my kids were little, sandwiches were the centerpiece of lunch...and I imagine that's true for most kids everywhere.

I think it would be helpful to have some sandwich makings on hand that are fast and easy and taste good too. If you are a parent or caregiver reading this, you have your hands full...and my prayer is that this section will provide you with some things that are fast, easy, and not too expensive.

This recipe uses coconut flour which is quite a bit cheaper than almond flour. Coconut flour is very absorbent, so you only need to use a little bit. Investment in one bag of coconut flour will yield lots of biscuits and sandwiches!

This recipe has cheese in it which may not be ok for everyone, depending on where they are in their recovery. However...this recipe is delicious without the cheese or seasonings. As a matter of fact, most children would probably like it better without all of the seasonings.

Sandwich makings to have on hand could include egg salad (recipe in this section), almond butter (be sure to read the labels and buy the kind with very low sugar) and "Berry Jam" (recipe in this section as well), nitrate free lunch meat (in moderation), roasted chicken, leftover roast beef or meatloaf, etc.

You make these in the microwave in a mug and they really do take just three minutes.

Melt one and a half tablespoons of European style butter in the microwave in a mug. I just used a Pyrex measuring cup because it was handy, and it worked just fine.

Add in the dry ingredients and mix well:

Two tablespoons of sifted coconut flour
One fourth teaspoon of baking powder
Salt, white pepper, onion powder, garlic powder, and parsley flakes to taste

To that mixture, add the following and stir well:

One egg
Two tablespoons of water
One tablespoon of coconut milk from the can

Stir in one fourth cup of grated European cheddar cheese if you’re to the point to where you can handle the cheese. If not, you might want to try using nutritional yeast in place of the cheese. I haven’t tried this yet, but I will and report on how it works.

Cook in the microwave for three minutes.

You can shake out a little round “loaf” and then cut it into four biscuits.
