I don't know how it will freeze...but it's worth a try. The dough is really easy to throw together, so you might test it out before you go back to school.
Yesterday, I made Chrissie's chocolate pudding with avocados and was thinking how delicious it would be in the pie crust. A great topping would be whipped up coconut cream sweetened with stevia...and maybe a few raspberries on top for decoration.
I'll have to test it out sometime soon and take pix.
Let us all know how the crust freezes. There could be so many fillings for this...I'm thinking chicken pot pie...lemon "cream"...coconut...etc.

P.S. I made Chrissie's pudding recipe and divided it up into little jars. These are so easy to "grab and go" and I'll definitely make these on the weekends for when I go back to work. I'm sending Mel a pic of the pudding in a jar so he can put it on this post. Thank you SO much Chrissie for your pudding recipe. I finally got my boyajian oil in the mail and tried out the orange flavor...it was delicious! Also...I've started adding a scoop of chocolate whey protein and some more almond milk to the recipe to extend it a bit, and it still tastes great.
