I look forward to seeing your recipes and pictures posted. The taco quiche especially sounds good. You can try heating some coconut oil with your butter when making your buffalo sauce. I find that heating a little coconut oil with butter keeps the butter from burning so quickly. Sometimes I think God gave moms an extra sense where their kids are concerned. Anna 6/23/2018 7:29:25 AM | Hi KAREN, THOMAS, CHERYL, LAURA, CRISSIE, and everyone else on the forum, I really appreciate all of your responses. I am really uplifted when I get your responses and look forward to them. Maybe we’ll be able to talk on the phone sometime, just ask MEL for my phone. I’m at home most of the time since I work from home so please call me any time. My daughter said that she doesn’t like seafood or fish of any kind. I did remind her that I used to make fishsticks for her all the time, but she’s not interested. She’s OK with chicken including ground, and also turkey. Tomorrow I’m planning on making her a Taco Quiche using the crust recipe that KAREN posted (thank you Karen). And with the same crust recipe I’m going to make her a coconut chocolate pudding pie (sweetened with stevia). Hopefully this will be photo worthy so that I can post it on the forum. But of course the taste is the most important thing. I bought her an air fryer which I hope will motivate her to cook up some good recipes. I also ordered one for myself and am looking forward to making a crispy cauliflower snack. My convection oven doesn’t make them as crispy as I want so I’m hoping that the air fryer will do a better job. They cost $54.00 each on Amazon. I tried to make a good buffalo sauce but failed 2 times and ended up stinking up my whole house. The butter burned before the arrowroot could thicken it. The second attempt I used olive oil and added guar gum and that was also a fail because it became all lumpy. KAREN maybe you have a good recipe or can figure out how to make it. All the commercial brands use regular white vinegar and I can’t find any that use apple cider vinegar. I thought this would really be good on the crispy cauliflower or even chicken nuggets. KAREN, I tried that Red Lobster cheddar biscuit recipe and it turned out great! I didn’t even use any cheese, AND I forgot the butter and it still turned out good. I’m sure my daughter will be thrilled with it. I used it for my hamburger in place of a bun. So good! :) I want to try the turmeric cauliflower flat bread. That looks good! Thank you so much for your recipes! Thank you for your advice about finding a farm KAREN, it may be helpful. But for now, so long as she’s eating chicken I’m happy. Hopefully as she eats it more often, she’ll lose her aversion to eating meat and be fine with it as long as she satisfied that the animals were treated humanely. CHERYL, I do believe that God went before me and prepared her heart. It was really noticeable to me. My husband was a little less aware of it. But he wasn’t dreading the conversation as much as I was. He seriously doesn’t worry about hardly anything! But this is the power of prayer. Thank you all of you for your prayers as well. THOMAS, congratulation on your new job! I’m looking forward to hearing more about your journey since I’m new and haven’t gotten to see how you were from the beginning. Karen 6/20/2018 8:39:42 AM | Hi Anna, I'm so happy for you! Your daughter's response is truly the hand of God working in your life. What a cause for celebration! And what a wonderful daughter you have who cares so much about God's creatures. She is surely a blessing to so many. I've given a lot of thought recently about clean eating, and can say without a doubt, I've been positively influenced by my adult daughter who has been a vegan for quite some time. She has actually figured out how to do keto and be vegan which is quite a challenge. There are lots of nuts involved, and when you'd asked about a vegan hamburger on last Saturday's call, I was ready with an answer because my daughter made one for me that was delicious. Well...she actually made meat balls, but it would be easy enough to change the shape and cooking technique. I totally agree with Mel though...it is important to have animal protein. I don't know why...but I do know from my own experience that I do better when I eat some red meat and eggs. It may be because of the way this disease affects iron in our bodies. I really don't know, but I do know I feel better when I actually eat red meat and eggs. It's not like I eat it all the time though...I usually buy one pound of grass fed ground beef a week and use it in a variety of recipes. Before I got sick, I'd almost completely given up red meat. As mentioned, my daughter has been such a positive influence...and as I've grown older, I've become more sensitive to how each person's role in the world is important in contributing to the whole. I've grown more aware of inequities in the world and the responsibility we each have for any creature that might suffer because of our actions or lack of action. Lol...btw...parasites are NOT included in my big heart of mercy to all of God's creatures. I want them dead and gone. End of story. Before I got sick, I was seriously considering becoming a vegan. There are many compelling reasons to do so, but...even in a healthy young person, much thought and consideration must be given to the delicate balance of nutrition if you eat like this. My daughter, having been a vegan for some years now, has discovered this and has made adjustments accordingly. Ok...back to the humane treatment of animals. I don't know where you live...but in my area, there's a wonderful organic farm within driving distance. I'm sure there are places like this all over the country, so hopefully you can find one, but when I read about it online, it made me so happy! The family who owns it decided they wanted to have a healthier lifestyle for themselves and their children. They bought some land and started this farm. It's absolutely beautiful. The animals are raised under the finest conditions...are grass fed...no pesticides...and are humanely treated. There is plenty of room to graze. The premise is called "one bad day" and they meet the end of their lives in the most humane way where they don't realize any stress. That might sound kind of bad...but...in my mind...that's the way I'd want to go...no stress...happy days and then go to sleep painlessly. This farm has a little store where they sell all kinds of things that are raised and processed under the strictest of standards. They have beef, chicken, eggs, milk, butter, cheese, and home made yogurt and more. I can't wait to go! So...I don't know if you can find a place like that in your area, but it's worth a google search. And if you can find one, maybe it would give your daughter some peace about eating products that come from a place like that. Anyway...I'm SO happy your daughter has come around. That will help her get better! And...just let her know that once she gets well, there's a way to keep her sugar down and still be vegan. My daughter's done it and she can too...but right now it's probably better that she does include animal protein until she gets well. Though...I'm totally convinced, that adding sugar back to any of our diets to much of a degree even after we get well would be asking for trouble. So...thank God for Sweet Drops stevia! I went online and read the backstory of the Sweet Leaf brand and am so impressed. It's even kosher (which made Mel happy)! Love, Karen | |||
