Look up vegetables with protein and then increase your intake on those at the meals you are not having meat. I believe some of those highest in protein are spinach, kale, broccoli, and brussel sprouts, but I'm sure there's more.
Also almonds, pumpkin and sunflower seeds are high in protein as well. Again take a look via our good friend google as I know there are many more but believe these are the top three.
Lastly, legumes are also a very good source of protein, as long as you can tolerate them. I could not early on as they caused increased inflammation for me but as the Protocol began to work and reduce my overall inflammation load I could eat them in moderation.
