I know it is difficult to do a lot of cooking when you are feeling so unwell.
I looked down the recipes posted in the Delicious Ideas for Your Dining Enjoyment thread to see if I could find a few recipes that might be pretty easy to make.
You might want to take a look at these recipes:
Posted 5/9/18 by Karen, PECAN CANDY
Posted 5/3/18 by Karen, SALAD THAT WON'T LEAVE YOU HUNGRY AN HOUR LATER
(You can always add or delete ingredients with a salad recipe like this, depending on what you have available. You can also make a simple salad dressing using olive oil, lemon, and a little stevia. Or make whatever simple dressing you like.)

Posted 11/21/17 (I think by Chrissie also), CAULIFLOWER 'STEAKS' RECIPE
Posted 6/27/17 by Karen, CHOCOLATE DIPPED STRAWBERRIES
Posted 3/27/17 by Deanna, BLACK BEAN VEGGIE WRAPS
Posted 4/6/16 by Nan, JUICY HEALTHY BAKED CHICKEN BREAST
(You can work with whatever seasonings you have. The main things you need are the chicken breasts, olive oil, salt, and pepper. The other seasonings will add more flavor but you don't have to have them.)
Posted 9/4/16 by Deanna, ALMOND BUTTER FUDGE
Posted 4/5/16 by Fiona, BROCCOLI SOUP
Posted 3/23/16 by Linn, COLESLAW (does not need mayo)
I hope you might like a few of the recipes above.
Also, you might notice a few other recipes in the Delicious Ideas for Your Dining Enjoyment thread that, with a little tweaking, you might be able to make simpler.
There are also simple things to snack on alone or add to salads like almonds, walnuts, pecans, berries, green apples, and boiled eggs.
God bless!
Cheryl
