Hi Again Chris,

Just thought of another super easy dinner...and after thinking of it, I got so inspired that I made it for myself tonight!

My idea is Egg drop soup, and it's fast and tasty.

Just boil some chicken broth...(homemade or if you're desperado buy some organic broth in the box...I know it has a few extra ingredients, but I've been ok with it so far, and hopefully you will too)

Break two eggs in a glass measuring cup and use a fork to blend them together.

Add a splash of water to the eggs (this keeps them a little fluffier and less rubbery)

Pour the eggs into the boiling stock a little at a time, and voila! You'll have egg drop soup!

I also like to cut up some green onions to go in it...I add them last because I like them on the raw side for crunch.

When I have this, I like to drink hot tea with it...either cistus incanus, rooibus, or chamomile...which are all teas we can have. A big mug of tea sweetened with stevia Sweet Drops and lightened up with some almond milk complements this dish nicely and fills you up. It's kind of emotionally satisfying too because you can eat a lot of it. I always make a whole pot of hot tea and drink every bit of it too.

It's even better when you enjoy it all at what I call "dinner theater" which is when I watch tv while I eat.
