As always your great ideas are so appreciated...and for those who weren't on the prayer meeting conference call yesterday, Laura suggested (and correct me if I'm misstating this Laura) that we focus on one thing we want to change this week (and I'd like to add..."and beyond") and then celebrate our success by posting what it was and what we did to address it in this thread. I love this idea! Just focusing on one thing is so much easier than blobbing everything together and getting overwhelmed. So...here's my thing for this week. Food. It's always food. I work so much...and live 35 miles away from my job...and drive from one location to another all day...and then have another job after work. There are a lot of excuses as listed above, but I'm determined to stop the cycle of getting tired and going to get "a salad" that turns into an "enhanced salad" and then as the week unfolds, and I get tireder and tireder, I just fall into something really bad like the cookie basket given to me as a gift of appreciation last week. The mature me would have thanked that person and then given them to someone else later. Not I. I had "just one" and I don't have to tell the rest of that story. Keto works well for me...but...like we all have to do to stay well...keto or any toxic disease diet means significant kitchen time. So...this weekend I just let everything else go and I stayed in the kitchen cooking up some wonderful things for the week. Lol...I'm sure Glenn is going to flip when he sees all the recipes and accompanying pix I sent to get posted. Thank you Glenn! But...my plan is already starting to pay off. I'm sitting down eating lunch now and it's SO much better tasting than anything I could buy. I'm having a wonderful cauliflower soup (will write and post recipe later this week) Keto mug biscuits (the Red Lobster recipe minus the extra stuff) Home made egg salad on the biscuits made with home made mayonnaise (recipe for both posted). AND... A piece of pecan candy for dessert! That recipe will be posted soon. So...I've made a start...I'm feeling great today...and I've saved money...am eating things that are toxic disease friendly...AND Keto friendly...and I'm so proud of myself. That's my thing for the week, and I hope everyone else shares theirs too!
