Like Thomas I too have Lyme and candida issues as well as morgellons and therefore I don't eat any fruit at all apart from limes, lemons, avocado and tomatoes.
If I eat fruit I get candida problems and the itching and biting on skin is worse.

I also have to follow a low carb diet. So no potatoes or other starchy veg like carrots or squash as they turn quickly to sugar in the body. I have a lot of cruciferous vegetables. I love roasted cauliflower with spices and coconut oil. Or even roasted Brussels sprouts or broccoli. If you put enough spices on them they are yummy.
I make kale chips instead of potato chips,with olive oil, sea salt and paprika and garlic powder, yum.

I don't eat brown rice anymore. I have quinoa very rarely and only a small amount. I watch my bean or lentil intake.

I have almonds, a few Brazil nuts (watch out some nuts can have fungal growth on them, almonds are best, peanuts are a no no, cashew nuts not good either).

Tahini sesame seed paste is good in plain yogurt or drizzled on salad with lemon juice. Sunflower seeds,flaxseed, sesame seeds, Pumpkin seeds I use to make seed flatbread, ground down with spices, sea salt and water, that's it.

My diet is limited, but you know you get used to it. And it becomes second nature once you get into the swing of it.
