I am curious if anyone on the forum has this particular combination: Morgellons (obviously!), Lyme, and celiac disease. In my late twenties (I am in my early 50s now), I was finally diagnosed with celiac disease, so my diet has always been a challenge. I suppose I should consider my celiac a blessing these days because I haven’t been able to have gluten or dairy in my diet for decades now. (Mind you, I wasn’t always “perfect” about sticking to the diet, but I surely am now! It definitely has made my transition to the required diet far easier) I also have no cooking talent WHATSOEVER. That isn’t even an exaggeration. When I went off to college, I could have screwed up boiling water! Quick example: The first time I ever tried to cook a steak on my own, I took one out of the freezer and plopped it in a frying pan on high. Yep, it was a smoky mess! My mother is a terrible cook, too, so I think it stressed her out too much to teach me. To be honest, I haven’t evolved much on my own, and a lot of people have enabled me over the years. I’m far better than I used to be, but I feel rather “handicapped” in this department! This is what I have been doing, and I would like some simple variations. I know there are a lot of recipes and suggestions on the site, but working full-time makes complicated cooking, well, complicated and sometimes rather stressful. Breakfast: Either eggs of some sort or hot flax meal from Whole Foods. Oh, my, I find this meal to be the biggest challenge, and I am always starved in the morning...when I was a little kid, I used to GORGE myself on dried cereal (Captain Crunch...Fruit Loops...Cheerios...you get the picture!) When I go to the grocery store now, I have secret fantasies of setting fire to the cereal aisle because of all the little kiddos out there who are ingesting pure sugar every morning of their lives!) Lunch & Dinner: I have a salad with veggies & nuts & either chicken or avocado or both. I use plain olive oil for dressing OR I have chicken or fish or something made with ground meat and riced cauliflower or some other veggies. I eat Skinny Pasta, too, which is a vegetable & tomato sauce...someone else posted about it being ok to eat. Blah, blah, blah. I can live with it because I want to get better, but I’d like some SIMPLE suggestions. I am so tired when I get home from a day at school, and I also have to cook something separate for my husband because he just won’t eat like I eat. I only drink water with lemon & flavored stevia (Sweet Drops brand) or herbal teas. I’d love a smoothie recipe that doesn’t violate the dietary restrictions AND actually tastes good. I hate the hunger pangs. They don’t make me want to cheat, they just aggravate me. Anyway, any suggestions would be greatly appreciated! I’m truly serious about SIMPLE suggestions. Jamie S. | |||
