Great question.
Fermented foods are an excellent idea at any point in the protocol as they are loaded with beneficial bacteria and a host of antimicrobial peptides that kill harmful pathogens and strengthen the health of our gut biome.
People who regularly consume fermented foods maintain greater diversity in their bioterrain which reduces the overactivation of immune cells and calms inflammatory cytokines.
Just remember, many good things are corrupted when corporate greed comes into play, and fermented foods are no different. Commercial products generally lack the benefits of fermentation (low levels of probiotics) and are often high in refined sugar or even worse chemical alternatives, so make your own whenever possible and pay attention to labels.
