Hi Kim,

I'm sorry for not following up sooner with your post about the Breakfast Bars...I'm new to this site, and didn't realize your response until recently!

I'm so glad you tried the Coconut and Almond No Bake Snowballs, and enjoyed them!!...I think they are so yummy. I was so excited when I found that recipe, to find such an easy-to-make treat that I could incorporate within my now cleaner diet!

I'm sorry about what happened with the Breakfast Bars. But I want to encourage you that certain small factors can cause them to be crumbly, but making a few slight adjustments can usually easily make them come out perfectly, and they are an absolutely delicious snack!!-:)

First of all, make sure that you press the bars into the baking dish prior to baking, with moistened hands (see step 6). It is important that your hands are dipped in water prior to working with the dough, because this adds needed moisture, and is an important part of the recipe.

You may want to slightly lower the temperature of your oven from the recipe says, because ovens can vary slightly, and baking them for too long or at too high a temperature will make them crumbly, too (they should be baked for twenty minutes at three-fifty normally, but you may want to try baking at three-twenty-five, or a shorter bake time). It's also extremely important to let the bars chill for at least two hours in the refrigerator before cutting into squares, this is so the ingredients can set together, and this will definitely play a part in keeping them from crumbling.

Another option, if those don't work, is to substitute the Almond flour for Chia flour, along with one quarter cup of coconut milk or water (Chia flour is excellent for moistening and creating cohesiveness in baked goods). Or, you can simply add in one egg, to help to soften it.

Let me know how that works if you try it again. They are worth the effort, if you can persevere and vary the method a bit.

There is also a wonderful no-bake recipe for something similar (Power Bars), that I noticed Janell posted in the forum. I made these recently, and would highly recommend them, too. I personally love no-bake recipes, and power bars are a great snack you can have for breakfast, too!

Just type "Power bar" in the search engine, and her recipe is found under the thread: "Food for Thought". I made two batches of this the other day, and was very easy and delicious!
