HUMMM! THAT LOOKS GOOD
Hi Everybody,

Ruth re-inspired me with her comments about how the low carb diet and recipes helped her across the finish line. Thank you Ruth...because of you, I've found my way back into the kitchen after over a year of just getting by.

And...congratulations for your much earned success!

Here's a new one I just put together today...

Jalapeno Poppers!

One dozen fresh jalapenos

Ten slices of raw bacon

One carton of Kite Hill cream cheese made from almonds

Pepper and garlic powder to taste

First put on some latex gloves and keep them on the whole time you're handling the jalapenos. The juice and the seeds can burn...so remember not to touch your eyes either.

Do the following to the jalapenos:
- cut the stems off
- cut in half lengthwise
- use a knife to get every one of the seeds out and the white membranes
- wash well with cold water, drain, and pat dry on paper towels

Here's the filling:

Fry four pieces of bacon until crisp and then crumble into pieces.

Mix the following in a bowl:

- one carton of Kite Hill almond cream cheese
- the crumbled bacon
- garlic powder and black pepper to taste (you won't need salt because of the bacon)

Fill each jalapeno half with the mixture and place on a foil covered pan.

Cut the remaining six slices of raw bacon into fourths. Place one fourth slice on top of each popper and then bake in a 400 degree oven until the bacon starts to get done. Then place the pan under the broiler for two or three minutes (watch it carefully) until the bacon browns to your liking.

SO GOOD! You could take this to a party and no one would know it's a diet (Keto) friendly recipe.

The whole recipe is only eight net carbs...so...you can have three halves for one net carb. That's a pretty good carb bargain in my opinion!
