Hi Everybody,

I'm back in the kitchen and counting carbs (thank you again Ruth...I needed the motivation).

One of the things many of us struggle with is meal prep. There are some wonderful things to eat when going low carb or keto...but sometimes it's not always easy to get something fast...and sometimes you just want something really GOOD and to not feel deprived.

About a year ago, Terry posted a pic of a product called Egg Thins (scroll down). They are thin, crepe like things that are made of eggs and cauliflower, etc. I found them at Sprouts this week and decided to try them. WOW! Terry! You hit this one out of the park!

If you haven't tried them, RUN - don't walk to Sprouts (and I think she also found them at Costco). These are a game changer! They're delicious and ZERO carbs. I bought two kinds...the plain ones made of eggs and cauliflower, and the flavored kind made of eggs and sweet potatoes (and turmeric). Both are ZERO carbs.

So...this discovery along with the Kite Hill cream cheese made from almonds (I can only find at Whole Foods) is now my go to for fast foods.

Savory: Spread an egg and cauliflower Egg Thin with two tablespoons of Kite Hill cream cheese. Top with chopped up Mississippi Pot Roast (recipe in this thread...scroll way down...I just used leftovers). Add some greenery (I used spinach and arugula), then roll up and enjoy! Each roll up is ONE NET CARB and delicious!

Sweet: (I also have these for breakfast). Put two tablespoons of Kite Hill Cream Cheese in a small bowl and sweeten with liquid stevia drops to taste (I always use Sweet Drops). Add some cinnamon (I like a lot) and stir. Spread on an egg and sweet potato Egg Thin. Roll up and enjoy. Same net carb count - one per.

I'm sure everyone reading this can think of all kinds of variations. If you do...then please jump onboard and post some pix. We can all use inspiration.
