I just discovered something amazing. It's fried radishes. Yes...fried radishes! They taste just like fried potatoes...I couldn't believe it. I love watching cooking channels on Youtube and my favorite is Whipoorwill Holler with Miss Lori. This lady is an amazing cook and I watch everything she posts. She is a Southern cook like me, so obviously there are a ton of things she cooks that we can't have, but I do get wonderful ideas from her. The fried radishes recipe is hers...so credit where it's due. Thank you Miss Lori! Fried Radishes One cup of organic radishes washed, dried, and sliced (I bought a variety pack of organic radishes from Sprouts...thus the different colors) About a half inch of organic coconut oil in a frying pan (Miss Lori says you can use any oil, but I used coconut oil because it's one we can have) Blot the radishes dry and heat the oil in the skillet until it's good and hot. Place the radishes in a single layer in the hot oil and flip over when browned on one side. Take them out and drain them on paper towels when they're brown on the other side. Sprinkle with sea salt and some pepper. Radishes are only 18 calories and two net carbs per cup. Coconut oil is 117 calories per tablespoon and zero carbs. So...this dish is only two net carbs! If you're interested in calorie count (I am because I'm trying to lose some weight) here's what I've come up with after doing some Google reading. Fried food absorbs two tablespoons of oil per two and a half cups of oil used. I used much less oil than that and then patted as much oil as I could out of the fried radishes with paper towels. So...I'm attributing one tablespoon of oil to the recipe which is 117 calories plus the 18 calories for the radishes themselves which equals135 calories. And it was so delicious...tasted just like fried potatoes. Enjoy! Love, Karen | |||
