Hi Everybody,

Today I started thinking about ham and potato soup. It used to be a go to in my house because it was so easy and delicious.

Of course we can't have the potatoes...so I just substituted cauliflower and it was equally delicious.

Mock Potato Soup

Wash and cut up a head of cauliflower and then steam it until it's tender.

Mash it up (leave little pieces) and then thin it down with some organic chicken broth and almond milk.

Dice up a package of Applegate (or any other brand of non cured nitrate free) ham and saute' it in a skillet of melted Kerry Gold butter (a couple of tablespoons). Add the cooked ham to the soup in a large sauce pan and season with salt and pepper. Warm it through and enjoy!

P.S. This one should freeze pretty easily too.
