Hi Everybody!

I posted this recipe a few months ago, but I made a variation of it that turned out to be pretty good, so I thought I'd share. There are a LOT of recipes in this thread, so I'm just submitting the whole thing again with tweaks for the new flavor so you don't have to go hunt for it.

I'd posted chocolate sprinkled ones before...but this one's lemon. I needed to use some lemons that were about to go bad, which was the inspiration for this variation.

Mini Lemon Cheesecake Dessert Cups

One carton of Kite Hill cream cheese
One carton of Kite Hill yogurt
One can (13.33 ounces) of Thai Kitchen coconut milk
The juice of two lemons
The zest from two lemons

Refrigerate the can of coconut milk for several hours. By the way...it's important to get this brand to make the net carb come out low. If you can't find it in your store (sometimes it's with the Asian foods), then it can be ordered off of Amazon.

Open the can of chilled coconut milk and discard the liquid (because there are a lot of carbs and calories in the liquid). Put the solid part in a large mixing bowl along with the entire cartons of Kite Hill cream cheese and yogurt. These two products are not dairy...they're made from almonds. They're kind of pricey and I've only found the cream cheese at Whole Foods and the yogurt at Sprouts, but they are totally worth it in terms of taste.
Using a hand mixer, mix all ingredients except for the lemon zest until well blended and then add Sweet Drops stevia to taste. Mix well.

This makes eight small servings, and I just used little jars to make sure I divided it into equal servings. I'm trying to lose weight, so small servings are a must for me right now...and the little jars helped.

Sprinkle a bit of lemon zest over each serving...put the lids on...and store in fridge.

They are really tasty...and although small...they are filling because of the fat content.

If you divide into eight servings, and use the products mentioned above, each serving is:
257 calories
3 net carbs
