Hi Everybody!

I just wanted to repost Anna's Slow Cooker Taco Soup with a few extra frills.

A lot of people in our community like the Kite Hill cream cheese and yogurt...both made from almonds...me included! It seems they make a sour cream out of almonds as well... I just found it at Sprouts last week and was so excited!

I've found it's really good on Anna's Taco Soup recipe. I also topped it with avocado and some cilantro micro greens. I had no idea what a "micro green" was until recently...but...it turns out they're actually baby sprouts of plants. I found them at Sprouts and they're so mild that I could add a lot more than I normally would which adds some crunch, taste, and texture...and...they're so tender you don't even have to chop them up.

The only difference in the recipe in this pic is that I didn't add the can of coconut milk. I didn't have any, so I thinned out the soup with water which worked out great and saved some calories. I also refrigerated this before I ate some and that allowed the fat to form on top so I could scrape it off.

This is SO tasty and it freezes well too. So...instead of you having to scroll miles down on this thread to find it, I'll just do a copy and paste on this post.

Anna...if you read this, just know your contribution is still being enjoyed SO much down here in Texas. This recipe is a real winner, so if you haven't cooked it yet, you might want to give it a try.

Anna's Slow Cooker Keto Taco Soup

INGREDIENTS

- 2 lbs. ground beef
- 2 cloves garlic, minced
- 1/2 cup onion, diced
- 2 tablespoons taco seasoning (see recipe below)
- 1/2 teaspoon ancho chili powder (optional)
- 1 can diced tomatoes
- 1 cup chopped bell peppers
- 2- 10 oz. cans chilies
- 1 can coconut milk (full fat)
- 1/2 cup fresh cilantro, chopped
- 4 cups beef broth
- optional additional toppings: (jalapeno, and avocado)

INSTRUCTIONS

1. In a skillet on the stove, crumble and cook ground beef, diced onion, and garlic.

2. Transfer ground beef mixture to slow cooker. Add seasonings and remaining ingredients except for the cilantro.

3. Close lid and cook on low for 4 hours, or 2 hours on high.

4. Serve and add toppings (fresh cilantro, avocado and jalapeno).

Taco Seasoning
(I added this to a small mason jar to use for future Mexican recipes)

- 4 tablespoons chili powder
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon crushed red pepper flakes (more or less depending on how spicy you like it)
- 1 teaspoon dried oregano
- 1 tablespoon paprika
- 3 tablespoon ground cumin
- 1 tablespoon salt
- 1 tablespoon black pepper
