Hi Everybody,

Here's a new one...Avocado Toast!

Avocado toast is is basically two to three items:

Toast
Avocado
Egg (optional)

This is an easy fix, and it can be enjoyed at any meal.

Ok...so starting with the toast...there are several recipes on this site and elsewhere for low carb "breads"...but here's a great one I recently found that's really easy.

Mix together in a mug:
2 tablespoons of sifted coconut flour
1 tablespoon of coconut milk
1 tablespoon of coconut oil (I use the liquid kind)
One fourth teaspoon of aluminum free baking powder
1 egg

Microwave for 90 seconds. it will look like a little round loaf when you shake it out of the mug. Cut it into two rounds and then spray it with a little coconut oil (or spread on some Kerry Gold butter) and then broil it until toasty.

Top it with avocado. Some people like to use thinly sliced avocado slices...and some like mashed avocado. I like it mashed. Just mash some in a bowl with a fork...I only add a bit of salt and pepper and lemon juice, and it's really tasty.

This is good with just avocado, but you can add an egg topping too if you want. The egg can be in any form you wish...some people use sliced boiled eggs...some scrambled...some poached...and some fried. The last is my favorite...I like a "fried" egg. Some people are really good at cooking eggs...and that's great if you know how...but I'd call myself just a practical cook...nothing fancy with the egg cooking. I just spray a skillet with some coconut oil and break an egg on it when it gets hot. Then add some salt and pepper (pink salt) and then flip it when it gets firm enough to flip. Cook it until the yellow is the desired texture and then put it on top of your avocado toast.

This is really filling and delicious....it's easy too!
