6/30/2021 11:56:08 PM | Not doing too much cooking in my weakened state but can give a few good ideas.I buy groceries for a week or so. So the greens, cucumber, etc go the fastest. If I have not used up all the cucumber and I do not want it to go bad I cut it up into the size of "pickle" I want.
I keep my old pickle jar with the pickle juice in it (Kosher dill). The original pickles have been long gone. I use the juice to put my cucumber in that is starting to get old and I can't eat it. Then I use it as relish or on a kosher hot dog on a romaine lettuce leaf with onion, mustard and unsweetened ketchup. The cucumber stays fresh in there and really lasts!
