Here's a recipe Mel is always talking about...he makes it every once in a while and then describes it to me on the phone in glowing terms. I finally asked him for the details and then made it tonight based on what he told me. Mel...I went off memory, so if this isn't exactly how you make it, it was still good anyway.
Brussels Sprouts With Bacon
Saute 4 or 5 strips of bacon (I use the nitrate free) Clean up, chop in half, and wash a bag of organic Brussels sprouts Fry the bacon until done and drain on a paper towel Melt a half stick of Kerry Gold butter in the remaining bacon grease Once good and hot, saute the Brussels sprouts, stirring well until coated with the grease Add salt, pepper, and minced garlic to taste and stir until everything is coated Put a lid on it and let it cook down a bit Cut or tear the bacon into bite sized pieces and add to the skillet...stir it up and let cook another minute or two.
So good!
This dish is quite pungent when cooking due to the strong flavors of the bacon, garlic, and Brussels sprouts...so I cook it all outside in my "outdoor kitchen" (electric skillet on a folding table on the patio...one makes do where one can).
