Hello Everyone,

Here is a delicious recipe!!!

Stuffed Pork Chops & Fried Cabbage & Okra

Buy very lean 2 to 2 1/2 inch thick pork chops. Butterfly them and season outer side and lay on a foiled wrapped cookie sheet sprayed with olive oil. Now season open side.

Stuffing - cut up however much you like of the following, I make a lot!!
1 large onion, 1 large yellow or orange bell people, 1 large zucchini ( sliced & cut into small pieces ) 4/5 cups fresh spinach, and 10 cherub tomatoes cut in halves.
Saute onion and bell pepper, add zucchini a little later, when this is tender add spinach and tomatoes and seasonings, cook til all is tender.

Put 2 to 3 large spoonfuls of stuffing on half of pork chop and close. Do all pork chops this way. Bake @ 350 or 400 til pork is white all the way through on both sides ( cut one open ).

Oh so marvelous!!!

Fried Cabbage & Okra

Put 4 to 5 T of olive oil in a big skillet or pan with sides. Heat. Cut up a bunch of cabbage ( 1 to 2 inch pieces, remember it cooks down a lot, so u need a lot!! ) Place in skillet, add a bag of frozen okra, add seasonings. Put a lid on it and let it cook down, stirring occasionally. When it starts to brown a little, good!! Let it brown some and then take out.

So delicious with these stuffed pork chops!! And so healthy!!!
