Here's the cranberry sauce I mentioned about in the 11/13/21 CTw/M - Enjoy!!

Ingredients:
- 3C cranberries (fresh or frozen)
- 1C cold water
- 1/2C Stevia/Monk Fruit sweetener
- 2 clementine peelings or peelings from 1 medium-sized orange

Instructions:
- Rinse cranberries off with cold water in a strainer - allow to drain.
- In a medium saucepan or pot, combine 1C cold water and 1/2C Stevia.
- Stir the water and sweetener mix until mostly dissolved.
- Bring the pot to a boil, while stirring to finish dissolving the sweeteners.
- Once boiling, add the peelings from the clementines/orange.
- Boil for 5 minutes, stirring occasionally. Rude the heat if needed to a simmer-boil to not boil over.
- Remove the peelings from the pot with a slotted spoon.
- Once the peelings have been removed from the pot, add the cranberries and bring the pot back to a boil.
- When the sweetener and cranberries begin to boil, reduce the heat and continue to gently simmer-boil for 5 minutes. Stir frequent to prevent it from sticking.
- By the end of 5 minutes, the cranberry skins will have popped and the whole mixture will be thickened. Remove from the heat.
- Cool the mixture completely at room temperature.
- Once cooled, refrigerate in a covered dish.

Enjoy cold, at room temperature, or reheated and add as a delicious side/treat to any meal!
