Hi Everybody,

How about some Christmas candy?

There are several similar looking chocolate candies on this thread, but here's a short cut. If you want to make any of these chocolate candies, just use this basic recipe and then add ingredients (that we can have) to your heart's content:

Melt equal parts of solid unsweetened chocolate and the solid kind of coconut oil. I use the microwave and melt for a minute and then go back and stir and check...you know how you do. Sweeten with liquid stevia and then you can add stuff and refrigerate until solid.

So...for this one, the "stuff" I added was:
pecans
chopped raw cranberries
some grated orange peel (we can't have oranges, but most of us have had not issues with the peel and it gives it a wonderful flavor)

I put this in a Pyrex pie pan and put in the fridge and then broke it into pieces. However...it was kind of hard to get out of the pan, so next time I'll just drop it by spoonfuls onto a parchment covered pan and then put it into the fridge.

If I do say so myself, this is excellent because of the pop of the raw cranberries and the orange flavor from the peel...very Christmasy! I cut the cranberries up pretty small though...I think a big bite of raw cranberry might be more "pop" than most would want. I probably used about a fourth cup for the whole recipe...but you can adjust amounts for your own taste.

This chocolate candy ratio works pretty well so be creative in what you add to it to create other versions of this recipe. I'm thinking almond butter...salted pumpkin seeds...etc. Let your imagination lead!
