NOW Mel asked me to republish This, I added a slightly different picture! Filling: Inside candy part 1 small can (5.48 oz.) Thai Kitchen coconut milk or a little over half a cup of a large can. Throw away the juice, only use solid part! 1 (10 oz.) bag of unsweetened coconut flakes 1/2 cup solid coconut oil, just melted 1/2 a bar of Kerrygold unsalted butter (cut lengthwise in half) just melted Liquid Stevia clear to taste No cooking!! Yippee!! Mix everything in a bowl, adjust sweetness to your taste. Mix well. Make into smallish almond joy bars and place on a parchment sheet or foil lined cookie sheet or platter. Place in freezer for 45 min. Last 5 min. go make your chocolate for dipping. Chocolate Coating: Mix half a bar of cacao chocolate ( I like the 86% intense dark chocolate by Ghirardelli. You can use 100% . Most grocery stores carry them. 1 can of coconut cream (only use the solid part, not the juice, throw it away- juice has more carbs. I don't always use all of the solid cream, I just like it more like milk chocolate. 4 heaping tablespoons of solid coconut oil, melted. Liquid stevia to taste. Put all in a bowl except stevia. Microwave 1 min., stir. Then keep microwaving for 30 second increments until it is liquid. Add Stevia to desired sweetness. Let cool a little, the dip coconut bars from freezer into chocolate and place back on platter or cookie sheet. With remaining chocolate spoon over tops of the bars. Place back in freezer. You can dip almonds in chocolate and place on top of bars if desired, then put in freezer. Makes 16 to 18 bars!! It's a lot!! 2.4 net carbs each. The only thing I do different from Karen's original recipe is I add coconut cream to the chocolate so it is not so bitter. It may add an extra carb or two but it would not be much. These sound hard to fix, but they are not!!! No cooking, just melting in microwave. Goes fast, delicious, and makes a lot and last a while. I would eat 1 or 2 but mostly one at night!! Store in a container in fridge or freezer! They melt if left out!! Well worth the tiny trouble!! Bon appetit !! Hugs, Robin | ||||||
