Baked Chicken Breasts Italiano,

tomato sauce

2 tablespoons oil, 1 medium white chopped onion, 4 cloves minced garlic,
1-28 ounce can crushed tomatoes or 5-7 medium chopped fresh tomatoes,
1/4 cup water, 1-6 ounce tomato paste, 1 tsp each of dried basil, oregano, and parsley, also 1/2 tsp salt, black pepper and red pepper flakes (optional).
Heat oil in large pot over medium heat. Add onion and garlic, stir and cook, 5 minutes. Add tomatoes and water,bring to boil, reduce heat and stir in paste. Fill empty paste can/jar with water, stir and pour into pot. Add all spices and stir. Let simmer for 30 minutes, stirring occasionally.
Preheat oven to 350 degrees F. Wash 4 chicken breasts and place in a large baking pan. Pour all of tomato sauce over breasts . Bake for 1 hour or more, until 165 degrees F or higher with meat themometer. Can serve with steamed zucchini or other veggies.
