Hello Everyone!

Sharing an easy go to Chicken Dinner!

Here’s what’s needed:

2 Boneless, Skinless Chicken Thighs
1/4 White or Red Onion Sliced
Handful of Sweet Peppers Sliced, I used some Red & Orange.
1 1/2 C Broccoli Florets Frozen
2 Organic Baby Tomatoes (orange & yellow cut in quarters)

Start out by chopping the veggies & tomatoes. Then while steaming the broccoli in another pan I was sautéing the peppers and onions and baby tomatoes in olive oil. My chicken was actually left overs from the night before, so I had placed them in the pan off to the side until the everything done being sautéed.

Now placing the chicken thighs on top, I put on the lid, turning it on low just to cook for a little bit longer. Once The broccoli was done being steamed, I drained it, place that on a plate with everything else on top. Season as you like, but I just used a some cracked pepper and garlic.

If I were to have cooked the chicken that night, I would’ve placed it in the oven covered in olive oil & seasoned. Baked at 425 for 20 minutes, flip and then do 15 minutes.
