Thank you Robin for your compliment...I hope my directions aren't too complicated...I sometimes over explain in an attempt to be clear.

Tea...I tried your No Bake Anytime Cookies and oh my goodness! I had to have a firm talk with myself to limit servings...they are that good. Thanks for the recipe!

Ok...here's my recipe for today:

Pesto!

Hello Everybody,
If you like pesto, you’re in luck because some of the pesto ingredients can be easily substituted for things on our food plan. Pesto is composed of five basic ingredients…basil, olive oil, aged cheese, garlic, and nuts. Most of the recipes I’ve seen have called for pine nuts which I typically don’t use, but if you do and you don’t have a reaction…all the better.

So…here are the ingredients I used:

Fresh basil
Grape seed oil (I would really prefer olive oil, but I get a reaction…so grape seed oil worked just fine)
Nutritional yeast (substitution for aged cheese)
Garlic powder (only because I didn’t have any other kind of garlic…but use whatever form of garlic you like)
Walnuts

I didn’t measure anything…I just started by putting some walnuts in my Nutribullet (I’m sure a blender would work as well) and grinding them down to a powder.
Next, I added:
A big bunch of washed and dried basil leaves (minus the stems)
A couple of tablespoons of nutritional yeast (or so)
Garlic powder and some salt to taste
Once all that was ground up, I added grape seed oil and just blended it until it looked right…about the consistency of yogurt.

I probably over blended it somewhat…but it was delicious!
In the pic…I served it over some roasted cauliflower I’d seasoned with salt, pepper, garlic powder, onion powder, and a bit of turmeric for color. I’d tossed it in a bowl with a bit of grape seed oil and then cooked it in the air fryer…but it would work just fine to cook it in the oven as well.

I topped it with some roasted salted pumpkin seeds and some crispy bacon. It was so good!

I’ve also served pesto over meat balls, on a hamburger, and over any kind of vegetables I air fry or roast.
