Some of you may already know this…but you can easily freeze lemon juice in ice trays and then pop them out to store in a Zip Lock in the freezer for easy use. I also like to use the zest of a lemon (finely grated peel) in any number of things.
Turns out you can freeze lemon zest too! You just spread the grated peel out on a pan and flash freeze until the little shreds are frozen. Then you can put them into a Zip Lock and store them in the freezer as well. If you flash freeze them, they won’t stick together and it makes it easier to just scoop out the small amounts needed at any given time.
I’ve found that it’s easier to remove frozen cubes from silicone ice trays. These can be ordered on Amazon and as an added bonus, they also come with lids. That makes it easier to get them to the freezer without spilling. I’ll include a link in this post for the little cube trays.
I saved my zested and juiced lemons to put one through my garbage disposal from time to time. It makes the sink and the kitchen smell so good!
It took a little bit of effort, but I was proud of myself for getting these lemons taken care of before they went bad. I have a bit of a history of buying a bag of lemons and thinking I’ll use them before they go off…but hey…lemons come in a pretty big bag sometimes (lame excuse...but I'll grasp).
To make it easier, I just got a big bowl and sat down in front of the tv and started watching Netflix episodes while I was grating / juicing. It got done pretty quickly that way!
