Here are the comments of our two resident dietitians;
Joe; Most of these seem pretty harmless. Of course, slow and steady is the name of the game, regardless of using Stevia as a sweetener. The one I'm concerned with is the cream cheese filling. A lot of that non-dairy cheese has other ingredients that may not be suitable for our diet, not to mention the higher amounts of fat content. Also, non-dairy whipped cream could have those same 'other' ingredients that are just different names for sugar. If using a non-dairy whipped cream, Karianne enjoyed the SO Delicious brand called CocoWhip and it didn't negatively impact her. Again, not something to enjoy frequently... moderation, moderation, moderation. Other than that, I think these desserts look pretty decent for this group.
Tea; Hi Mel. Thought I would just give you a couple of thoughts in regards to the recipes that defiantly need to be tweaked a little bit for the delicious dining… Just my thoughts once again, but these things definitely need to be removed!!! One is powdered sugar, no if and or butts. Also definitely find a replacement for Crisco that horrible nobody should be using that internally. Lastly I say do not use cornstarch. I think a good replacement for that would be xanthan gum! I am sure that Joe would agree with me too!
