I Wanted to share this recipe with you.... I call it a "bounty bowl", even though traditionally they are called "Buddha Bowls". You cannot see easily every component of this meal, so I will list it below. I like this because you can prep it all in one hour, and it makes enough to last an entire week.
Roast veggies in 400 degrees for 40 minutes. Use olive oil, salt and pepper. Bake salmon at 400 degrees for 12-15 minutes. Use olive oil, salt and pepper. Make Walnut sauce. (blend 1 cup walnuts, 1 tablespoon coconut aminos, 3 cloves of raw garlic, and 1/3 cup water) Assemble bowl!
Below is a list of items that I used in my bounty bowl!
-Bed of spring mix -1 salmon filet -1-2 cuts of polenta -1 avocado -1 thinly sliced baby cucumber -julienned purple cabbage -1/4 cup roasted brussel sprouts -1/4 cup roasted cubed butternut squash -1/4 sauteed mushrooms -1/8 cup edamame -1/4 cup thinly sliced radish -thinly sliced purple onion -2 tablspoons ground flax seed -sprinkled with whole flake nutritional yeast
Eat with Nori (dried seaweed) and the walnut sauce!
I know this looks like a lot of food, and that is because IT IS! I only eat once a day, so I tend to eat larger amounts. But assemble the bowl however you would like to with whatever amounts or items that you enjoy! It is an opportunity to get a lot of variation in nutrients and fresh, raw veggies as well.
