Breakfast Pizza

6 Extra Large Brown Eggs
1 C Frozen Baby Broccoli
1 to 2 Cups of fresh veggies
chopped small. I used red & yellow bell peppers, radishes, white onion, zucchini and celery.
12 Garlic Cloves, peeled.
1/2 Package of Applewood Smokes Bacon, uncured cut into 1 inch Squares
Splash of Coconut Milk

Take the bacon added along with 12 garlic cloves and the frozen broccoli and throw them in the air fryer @ 390 for 11 minutes to start making them crisp.

Dice all the vegetables up and place them in a pan where you have already melted some coconut oil (so nothing sticks).

Stir occasionally, while whisking the eggs with a good splash of coconut milk. Pull out the broccoli once it’s completely thawed, approximately three minutes (if it’s large size broccoli you may want to chop it up into smaller pieces, the approximate size of your other vegetables) and stir up and let the garlic and bacon continue to turn crispy.

Check on the bacon and once it’s crispy, pull it out to break/cut it up and let the garlic remain in there till it becomes roasted & crispy on the outside.

Once the garlic is roasted, take your beaten eggs and pour it out over the vegetables that are evenly spread out. Sprinkle the chopped bacon and roasted garlic over the top. Season with your favorites. I used pepper, oregano and more garlic. Could add parsley or some salt if you like.

Cover with the lid on turn it on low/medium low, should be done in approximately 5 to 7 minutes.

You won’t need to flip it just with it down low and the lid on it should cook it evenly, now given how much vegetables you had it may take a little bit longer, but always check it carefully if you need to. You’ll know once the top of the “pizza” is no longer runny or by gently lifting up the side edge and seeing that the bottom is cooked well.

Now off the burner set aside for a couple minutes to let it become more firm and it’s ready to go!

Carefully divide up into four sections with your spatula, perfect for two dinners!

If your diet allows, you could have some organic salsa on the side with some goat cheese.
