Please excuse that I didn't respond sooner to your question about vetting the bread that you asked. I missed it completely. But here is my response. The ingredient profile is actually quite healthy. Here are the Sourdough bread ingredients to view, from the companies own website.
Net Wt. Per Loaf: 1 lb. 5 oz. (595 g)
Ingredients: Water, Millet Flour*, Sorghum Flour*, Teff Flour*, Quinoa Flour*, Buckwheat Flour*, Psyllium Seed Husk Powder*, Raisin Juice Concentrate*, High Oleic Expeller Pressed Sunflower Seed Oil*, Flax Seed Meal*, Sea Salt, Sunflower Seeds*, Citrus Fiber*.
We see a wonderful combination of healthy (what are known as ancient grains) here. I'm especially looking at the value provided by buckwheat. And all the ingredients are designated as organic.
The price seems very reasonable as well. I see this as a very clean and very nutritious bread. I give it an A for its many overall potential benefits. "Enjoy"
