I totally agree with you about sugar. Sugar is the root of a lot of diseases, not just ours. By following what you outlined in the Keto diet, we can rid ourselves of Morgellons and prevent other problems such as Diabetes and Alzheimers. So by limiting our sugar/carbs we are creating a healthy lifestyle not just a treatment.
There is a theory that Alzheimer's Disease is associated with too much sugar in the diet. I'm sure everyone has read the story that Kris Kristoferson was thought to be suffering from Alzheimer's when he was later found to have Lyme Disease and started responding to treatment. I love how you explained figuring out net carbs - very easy. We can have our "cake" and eat it at too, within limitations and made with low carb flours such as almond and coconut. I agree about the use of stevia, it is a wonderful food product and sugar substitute. (I was using stevia before I got sick and loved it then.)
