The optimal diet for most people is an alkalyzing diet of veggies, fruits, nuts, seeds, and whole grains, while limiting meat and dairy and avoiding anything processed... especially refined carbs (to help control the fungal component of coinfections). While all of that is basically true, it is also true that there is no one right diet to fit all people. There are several excellent articles on the Logos website that address this issue in detail, such as One Man's Meat is Another Man's Poison, Metabolic Typing and its Role in Weight Loss, and You are What you Eat. It is wise to start educating yourself and to start learning from your own experiences as well. Soda is a huge no-no. not just for Morgellons sufferers, but for general health. Read labels, or better yet, make it from scratch. Stay away from unhealthy fats (they are in most processed foods). Olive oil, coconut oil and organic butter are great. No canola, soy, safflower, etc. - Vegetable oils have actually been linked with the rise of heart disease over the last century, not-saturated fat as we were lead to believe. Good quality (grass fed, organic) beef and buffalo are great for you (in moderation). And exercise!!! Super important. Remember, there is no one diet that is right for everyone... we are all different. Some are fast oxidizers; they do well with a higher percentage of protein in their diet. Slow oxidizers need more carbs. The science behind it gets complicated, but it all boils down to taking control of your food intake - quality and quantity - and listen to your body to see how it responds to different foods. Then make changes accordingly. Start with the foods God provided for us and leave all the boxed and artificial stuff alone. All it does is feed the sickness industry. What a rare and wonderful thing it is to see a gifted physician with such an obvious grasp of the role of diet and nutrition in health. Not only does he expose some very common misbeliefs such as the unsubstantiated vilification of saturated fats and the cholesterol propaganda used to promote dangerous drugs such as statins, he really does a good job of capturing the diversity of factors that affect how we metabolize our food. He points out a chilling fact that explains why the U.S. leads the world in degenerative illness; not only is the Standard American Diet grossly imbalanced emphasizing all the wrong things, but we have allowed even the truly good health promoting foods to be adulterated so they are no longer healthy (such as grain fed animals, genetically modified crops, or farm raised fish). He also points out that although there is no such thing as a perfect diet (we are all different), most humans respond best to an evolutionary (paleo) diet that combines small quantities of high quality animal protein (fish and wild game or free range livestock)with larger quantities of vegetables, raw nuts and seeds and low glycemic fruit. Each person is different. Besides, I have over 80 that were identified (it included broccoli and chicken and cucumbers), and you may be reacting to foods that are safe for me... If you cannot do testing, then I would recommend following some type of elimination diet to see if your symptoms are food-related. Food intolerances for me show up as rashes on the skin, but some people get joint/muscle pain, headaches, etc. If you google 'how to do an elimination diet', there are many resources out there. I asked John B for advice, and he suggested that we eliminate the things that were contributing to ongoing toxicity, acid pH, and fungal overgrowth such as sodas, cake, cookies, ice cream, pasta, and bread. I have come to enjoy salads, fruits and vegetables more than at any time in my life. Today my beverage of choice is Brita filtered water. Mel John B 8/25/2011 There is near universal agreement that citrus fruits are alkalizing, but considerable confusion as to why. Citrus fruits are acidic; lemons and limes have a pH of around 2 (pH 7 is neutral). So how could they be alkalizing? Your stomach is an organ that is designed to produce acid to break down proteins and other nutrients before they enter the small intestine. The small intestine is designed to be alkaline, so as to break down the nutrients even further to facilitate absorption into the bloodstream for transport to the cells. Stomach acid (HCL) has a pH of around 1. Your stomach normally maintains a pH of around 2 to facilitate the digestive process. Foods that are whole and natural, unadulterated, and high in acid (like lemons, kiwis, grapefruit, etc.) are easy to digest because they cause so little stress to the stomach. Little or no additional acid is needed for digestion, and consequently, less neutralizing is required in the small intestine. Problems occur when 'alkalizing' and 'alkaline' are used interchangeably. Alkaline foods and beverages call for more stomach acid, and may contribute to acidification of body fluids and tissues down the line. But eating more alkaline foods is just what many are recommending, with potentially dangerous consequences. Alkalizing the stomach puts extra stress on the entire system. Failure to break down proteins and fats in the stomach due to the use of anti-acids is considered by many experts in the field of nutrition to be a leading contributor to the development of colorectal cancer. Disrupting the acid balance in the stomach is bound to have negative effects, and especially if it becomes a regular routine. Bottom line, if we eat the mineral rich foods that our creator intended for us to eat, we will maintain a slightly alkaline blood pH without causing undue stress on the body. If we eat processed, demineralized and devitalized "food" our bodies must rob from their own resources to survive. So, rather than buying expensive alkalizing pills or water, the best way to prevent buildup of acid wastes is to eat God's foods. If you want to supplement your diet or use something to offset poor choices, the best way to go is to start your day with a high quality greens drink. The only drawback to greens drinks is that they typically taste horrible. Blessings, John B Chelsea 8/28/2011 You can make a lot of progress if you discipline yourself to cut out all sweets (they do feed on the sweets) give up the coffee unless you can alkalize it (some are using a dash of pure baking soda, NO additives). I don't drink coffee or sodas but had to give up the fruit juices and even fruits. Only fruit I do eat is bananas and more ripe the better. Gave up all meats, chicken, fish for they are all acid. I drink green tea, almond milk and eat alot of almonds as a snack. If you are going to eat something acid, you need to offset it with alkaline foods if your ph is not where it should be. For instance, I eat oatmeal with powdered whey protein every morning which are low acid but I cook it with akaline water, use almond milk and stir in diatomaceous Earth (which they say helps in mopping up during detox) but even if it does not do that, it is akaline so it makes my meal akaline. I used DE almost from the begging of my treatment but later on quit using it because I did not know if it was doing any good. But then when I started looking into Acid/Akaline and testing what foods I could, I found out that DE is akaline (not sure if all brands are but the one I have is) so decided I would go back to using it since most foods seemed to be acid and DE was one more thing I could use to help me get my body to an akaline state. Keep plugging away by following the protocol and you will find yourself feeling better and having time for other things. Also you will be able to concentrate on narrowing your symptoms down to just a minor agitation until you figure out what will work for you to get rid of it. Our bodies are all different and will react to different things in different ways and in my case I was way off on a lot of vitamins so I had to do things recommended by my dr. Always keep in mind that others have got this under control so there is hope which hopefully keep your spirits up. Tim 8/30/2011 I have had great success in not only the fresh squeezed lemon water but also taking alfalfa tablets (cheap) three times per day or super greens food tablets sold at health food stores. Only meat I eat are chicken/turkey and a lot of tofu meals. Mix tofu with stir fry veggies and cook together. Praying for you and it Will Get Better. I have been through it and 95% better now. Diet is key here. Jessica S. 5/18/2012 I have now realized how important it is to take these protocols and start with a healthy diet. It takes so much courage. My skin does not itch as much as it was before taking the protocols. I have felt so clear minded and my feelings of depression and worry is slowly going away. Im now juicing vegetables and checking all ingredients making sure that there is no sugar, wheat, dairy, or flour in any product that i buy. Its so much fun finding healthier foods. I really never knew that there is brown rice noodles or brown rice flour! There is so much to cook! I was told by Teresa S. that i would be in the kitchen a lot lol and she was right! Now my parents are enjoying the meals i cook. Im trying to change their diets as well because they are both diabetics. But the protocols + A2Z kit + diet= is the key. Theresa 7/3/2012 If you are not eating clean, i.e. NO SUGAR - not even natural sugars contained in fruit, no white flour products, rice, bread, pasta, NO Dairy, you will not get well. Yeast love sugar and you have to starve them to death. But that doesn't mean you have to starve, it just means you have to get creative. Beans, Brown rice (excellent brown rice pasta and breads), nuts, olive oil, coconut oil, meats, fish and veggies will become your new best friends. Once you detox from the sugar your foods will have a new and wonderful taste. You will stop craving sugar and when those sugar cravings come take some extra candida rid and Magnifyzme, add some Colostrum, Monolauren and use your zappers, there are many tools available to win this battle against these yeast/fungus. 7/5/2012 I followed a variation of the candida and fungus elimination diets. Basically this is what I started out eating. Fresh vegetables/cooked vegetables-in the beginning I stayed away from the more sugary vegetables like beets, carrots, etc. and concentrated more on the green leafy vegetables. Also no high starchy vegetables like potatoes. Grains-the only grain I eat are brown rice, millet and quinoa. No pastas, rices, flours, breads that are not made of the above. Also make sure they do not contain any added sugar or yeast. There are wonderful brown rice flours, pastas and breads. Meats and Fish-Had all meats and fish just prepare myself and make sure any sauces or ingredients added have no sugar, white flour products or yeast. Fruits-the only fruits I have for the 1st several months was lemons and limes (to make my beverage). After several more months I added in green apples and grapefruits. Sugar-Absolutely NO sugar. No sugar in processed foods, no fruits (other then lemons and limes), no artificial sweeteners other than 100% pure stevia leaf powder. No honey - NO SUGAR. Wheat, Bran, Oat - NO! no other grains or flour or anything other than Brown Rice (whole kernel and unprocessed), millet and quinoa. Bread, pasta, rice, flour - NO! unless it comes from brown rice, millet or quinoa. Sugar - NOOOOO! Just stevia - no natural brown sugar, no honey, no fruits, no artificial sweeteners. Teas- drink tons of camomile and green teas. The less processed the better. Water- drink tons of distilled water. Distilled water is purified and I figure I don't need any nasties coming from my water so I stick with distilled. Distilled water also aids the body in pulling toxins. Hope this helps. Manuka honey is actually usable in terms of natural sweetners. See here: Manuka Honey has natural antibacterial, antimicrobial, antiseptic, antiviral, antioxidant, anti-inflammatory and antifungal properties. This is the ONLY kind of honey that can be used. It can be found in most health food grocery stores and online. Also, research herbs... I talked about Basil before... Which is anti-bacterial, and anti-flammatory. If you can you want to use it raw, ala fresh pesto with your friend olive oil, or in a salad... Food can heal you, if you know what to eat, and how to eat it. Remember veggies, raw are your friends. It summer, so very much salad time!!! Even if morgellons makes you miserable, when you eat well and consciously, it can be a very yummy luxury that pays off! Who wants salad dressing made with lemon juice, sea salt, black pepper and olive oil?? That simple? Wait, is it too acidic? I enjoyed it and got some much needed answers. I wanted to post about food and share a little bit. First of all, I think Monica and Theresa's posts on the topic 'DIET AND DOCTOR' summarize very well what you are supposed to eat. The goal of the diet is to keep your body as alkaline as possible while eliminating any food source (sugars) for yeast and fungus in your body. Plain and simple. That's why no natural sugars are allowed at the beginning. You want to attack and starve the enemy, a 1-2 punch. I know it's hard and one of a sudden you feel like there's nothing left to eat. Let me rephrase that last thought: you cannot eat the way you have always done it. End of the discussion. I have known about the candida diet for a while, I tried it 4 years ago and I lost a lot of weight, which was not great because I need to gain weight. But I made me realize what kind of food I was eating. Fast-forward 3 years, I stumbled upon the 'Paleo' diet, which is in some ways is similar to the Candida diet. Avoid sugar, yeast, most grains, anything processed, and dairy. What you're left with is veggies, fruits, quality animal protein, some nuts, and quality oils. This diet has been working for me, but I still have to keep my portions a tad larger, because I am not eating the traditional 'fillers' and still want to get enough calories to fuel my training. I'm throwing the idea of 'Paleo' out there for those who feel there's nothing left to eat. There are tons of blogs on Paleo recipes, which can help add variety to your daily menu. Just read the recipes, choose what ingredients fit the stage you are in, and there you go. Some people may be scared by shifting their paradigm from eat low-fat and grains to eat more fat and protein. Do your research, you might like this shift as much as I do. I was compelled to post because I once read the saddest post on candida forum: 'Please help, there's nothing I can eat, I've been surviving on boiled chicken and almonds for 2 weeks, my kidneys cannot take it anymore'. I gasped in shock! Please don't do this to yourself. Here is a summary of my 'culinary' journey and ideology: 1. Going on a 'paleo' or 'candida' diet is NOT, let me emphasize NOT, convenient. It's an investment of time, money, and energy. But the results are worth it. 2. Be open-minded. You'll have to be open to eat veggies and other things that you're not used to. 3. Be adventurous. I sometimes go to the supermarket and choose whatever produce looks appealing and try to cook it. You might be in for a nice surprise. This week I found out I love radishes. 4. Be strong. Avoid temptations, eat before a going to an outing you know they will only have pizza, and bring stuff you can eat to potlucks. I sure have more points but this is all I can think of right this moment. Ok, so what I had for dinner tonight: Chicken thigh fillets cooked on the skillet, olive oil, pepper, sea salt, and a dash of cayenne pepper. Raw green salad, spinach, garden greens, radishes. Topped with the darker olive oil and more cayenne. Half a hass avocado. 2 teaspoons of coconut manna as dessert. Good luck on your culinary discovery. Peter 7/17/2012 I have found Yellow Butter Squash in Wal Mart for only $1.58. They are huge and will provide you with two meals vegetables easily!! The cooking instructions are usually on the Squash itself. Also, Wall Mart regularly sells Avocados for 68 cents each. $3.50 will get you 6 of them!! Next, In have found canned AMY,S ORGANIC BLACK BEANS and LINTEL BEANS at the dollar store. These are really good for you. However, please DON'T BUY your fresh fruits or vegetables there, as most are grown in Mexico and I know the water used to irrigate them is not safe!! One last thing...AND THIS IS HUGE. I have discovered that ROOIBUS RED TEA is a very potent ANTI FUNGAL. I found 20 bag cannisters at VITAMIN WORLD for $3.49. BUT GO SLOW, as the first time I drank it, I herxed. Now I drink it many times during the day and it lays the rhizoids down almost right away. Finally, I have found that the ESSENTIAL FLORA seems to be more effective when refrigerated. For snacks when I need to, I will eat sunflower or pumpkin seeds. This diet does not require much cooking (which I don't like to do) and, for me, has kept me satiated and feeling well nourished. I have not varied much from it in 60 days now and together with the supplements seems to be working well for me. However, I believe it is best to find the foods that work best for each of you, as we all have different metabolic types. Please pay attention to looking at the label for these in the foods you are buying and eating and aviod them if you can! Sugar (unless cane sugar) Aspartame, also called NutraSweet, glycine soy isolates Soy lecithin BeneVia, AminoSweet High fructose corn syrup (HFCS) Soy milk Baking powder Canola oil Hydrolyzed vegetable protein Soy protein Caramel color Soy protein isolate Soy sauce corn flour corn masa corn oil corn syrup cornstarch cottonseed oil cyclodextrin maltodextrin triglyceride dextrin mannitol diacetyl vegetable oil maltose modified food starch fructose (any form) glucose Nutrasweet glutamate glutamic acid phenylalanine monosodium glutamate (MSG) mono and diglyceride maltodextrin triglyceride xanthan gum We have too much Candida (Yeast)in our bodies. We also have destructive Fungus. Candida and fungus feed on sugar. AVOID SUGAR COMPLETELY!! Sugar will make more skin issues and keep you sick! Eating foods like bread, potatoes, and white rice contain starch. Starch turns to sugar which will make more skin issues. Eat brown rice and brown rice bread instead. It wreaks havoc on the body in a multitude of ways, not the least of which are fueling yeast or fungal overgrowth, causing systemic inflammation, and suppressing immunity... not a good thing for anyone, but especially not for Morgellons sufferers. Fruit or other natural sources of sugar are somewhat better because fruit delivers sugar in combination with fiber and various nutrients. Consequently, the body's response (in terms of insulin spike, etc.) is less severe - as measured by their lower glycemic index. However, some isolated fruit sugars (like fructose) are even worse than table sugar. Many store bought juices contain added sugar, and typically the absolute worst kind, high fructose corn syrup. Bottom line - all forms of sugar feed yeast and other pathogens, including parasites. Best practice - especially early on - is to eliminate all forms from your diet. Stevia is by far the best substitute if you must have something sweet. It has no metabolic downside whatsoever. I have also found 'Lundberg' BROWN RICE CHIPS, they are delicious not to mention USDA Certified Organic! KIND products offer a lot of great Fruit & Nut Bars as well as Granola. I mix 2 tablespoons with 8oz cold water(first, in the A.M.)and the second time around (in the evening) I add another 2 tablespoons to a big cup of Green Tea with some Lemon Juice. To my surprise, I've grown to enjoy the combination! Now for my favorite part, TEA! I have always been an avid Tea drinker so I was absolutely thrilled to learn that was ONE thing that wouldn't change though all of this. I also drink Blueberry Rooibos in loose-leaf form and I can't get enough of it.) - 'Puerh & Peppermint Tea' (This tea holds INCREDIBLE cleansing effects, it's great for your blood, as well as digestion. It is also known to increase metabolism!) -ANY Green, Peppermint or Chamomile Tea is going to be a plus! Peter 2/5/2013 Here is a great tip for you. I discovered this accidentally. Put a couple lemons on the top of your stove when you are broiling or baking. Leave them there for maybe 10 to 15 minutes. You can then cut them in half and the pulp will more easily come right out. I then add this pulp to water. You can also add the pulp to any vegetables that you may be steaming. Save the water in the pan, let it cool, and then drink it. This becomes a power packed nutrient dense and alkalizing drink! STRENGTH and LOVE Peter Justin 2/10/2013 I also found something interesting regarding whole grains in the diet. Whole grains are very good for you but they can be difficult to digest if they aren't sprouted or soaked in water overnight in an acid solution such as a tablespoon of apple cider vinegar or whey from yogurt or yogurt itself. The reason for the slight difficulty in digestion is because they have an outer layer called the bran which has plant chemicals called phytates which can decrease digestion and keep the seed from sprouting. To improve digestion, and absorption of minerals all cultures used to sprout, soak, or ferment, their whole grains. Lately I have been soaking my oatbran/oatmeal in water overnight with a teaspoon of yogurt to digest the phytates and break them down. I dump the water replace it with fresh water and then cook it. Its makes it much more digestable it lowers the phytate content and allows more minerals to be absorbed from the food. I soak my rice the day before in water add a teaspoon of yogurt and let it sit overnight I then dump the water and let it sit till the evening it will usually begin to sprout. I then cook it. Its been working for me well; I just plan ahead abit. I find since I have been doing this my digestion has improved allot. Google. soaking, sprouting grains and germinated brown rice. You will be amazed! Peter 3/25/2013 My diet remains unchanged. I am still eating specific raw vegetables. Radishes, red onions, red bell peppers, spring mix greens, almonds, shredded coconut, jalapeño peppers, garlic and different herbs with EVERY MEAL. The fresh herbs I am rotating are ginger, basil, oregano, tarragon, cilantro, and rosemary. I am also using Sharwoods hot curry powder. It has a blend of spices which include cur cumin, turmeric, and cloves, all very potent anti-fungals! Remember that anti-fungals break down the fungal cell walls but that it is important to rotate them so the fungus cannot adjust. I will also use 3 to 5 drops of Oil of Oregano under the tongue twice a week. I continue to eat eggs and avocados daily, with range fed beef or chicken twice a week. I also am still taking Whey Protein Isolate and food grade Vitamin C when money will allow. An occasional granny green apple and pumpkin seeds rounds everything out. I initially referenced Doug Kauffmann the nutritionist of KNOW THE CAUSE, he has some helpful advice,including books on cleansing diets to starve candida. Fungus being a major component of Morgellons it is soo necessary to starve the fungus which will allow the protocol to do it's job in restoring your system. I followed his Phase1 diet for nearly 2 yrs making a lot of progress but it wasn't until a friend told me recently to cut out the buckwheat and quinoa I was eating have I started to see more progress. NO SUGAR, NO YEAST, NO FRUIT,BREADS,GRAINS, LIMIT CARBS! EAT VEGGIES!- (excluding carrots & potatos beans), lean meats, fish,everyones body responds diferent to foods Im just saying what works for me.. i exclude even brown,white rice some others eat this and make progress I wouldn't.Eat highly alkaline foods.. I was eating cashews for the longest time not realizing thier acidic.. ALMONDS HAZENUTS are alkaline, Oh and PURIFIED LEMON WATER, STEVIA to sweeten:).. Also, Wall Mart regularly sells Avocados for 68 cents each. $3.50 will get you 6 of them!! Next, In have found canned AMY,S ORGANIC BLACK BEANS and LINTEL BEANS at the dollar store. These are really good for you. However, please DON'T BUY your fresh fruits or vegetables there, as most are grown in Mexico and I know the water used to irrigate them is not safe!! One last thing...AND THIS IS HUGE. I have discovered that ROOIBUS RED TEA is a very potent ANTI FUNGAL. I found 20 bag cannisters at VITAMIN WORLD for $3.49. Please note that some of the recipes here (especially the raw food recipes) require a food processor, a powerful blender (such as a Vitamix) and in some cases a food dehydrator. Please also note that some of these recipes contain sugar (from fruit), which early on in your journey back to health we don't recommend, so pay attention to that. Natural fruit sugars are better than refined sugar, but even they can feed fungal overgrowth, etc. Organic ingredients are encouraged when possible, as are free range livestock and wild caught fish. BREAKFAST WITH BILL My name is Bill and I live in North Carolina. I have had Morgellons for one year and I was fortunate in that I caught it early and extremely fortunate that I found Mel's web site. At this point on my road to recovery, I believe I am 90% cured. When I first went on the protocol and had to deal with the limited diet it was tough on me, since I could not eat my normal meat and potatoes. I was never accused of being a cook so I was lost in my own kitchen, and I was always said that if I did not have a microwave, I would starve to death. However, I did persevere, and actually got to enjoy learning how to cook and be creative in the process. For a good nourishing breakfast that is simple and quick to make, here is what I would suggest: CEREAL: Rolled Oats from *Trader Joes Gluten Free, Dairy Free, Wheat Free, and no preservatives put in micro for two minutes and it is ready to eat. I add a bit sea salt, cayenne pepper, and two tablespoons of coconut oil. *Whole Foods has similar products like their Rice and Shine, which is organic brown rice grits, and Gluten Free EGGS: cage free or organic. I use to fry two eggs but now I just crack open a couple of eggs in a glass, micro for 40-50 seconds to get the poached egg taste and then mix them in with the oat cereal. If I am in a hurry, I will just mix in two raw eggs. TOAST: 2 slices of Trader Joes brown rice bread, buttered and topped with cinnamon. Some of the better stores will also have this bread, even though I know that Whole Foods does not carry rice bread, at least the stores in my area. BEVERAGE: one glass of plain coconut or almond milk. I know they have a vanilla flavor, but with this choice you also have to deal with the addition of sugar. VARIATION: I may add flex seed to the cereal, or blueberries. I would also have a banana or orange, but because of the sugar content I have to hold off on those for awhile. END RESULT: Simple, quick, good protein and the oat cereal with fiber will fill you up. Hello All, Today's entry is from Peter (How Lucky Can You Get): Hello My name is Peter. I would say I'm over 90% cure of symptoms of Morgellons. The recipe below is of my own creation: Roasted Vegetable Medley 2 cups of baby carrots 2 cups of brussels sprouts cut in half 2 cups of radishes cut in half 2 onions quartered Half a cauliflower cut into fluerettes. 1 �- 2 cups cup of extra virgin olive oil 1 tablespoon of coarsely ground sea salt 1-2 teaspoons of black pepper 4 cloves of garlic minced 2 lemons juiced (optional: zest lemons to be added in oil mixture below for more flavor) In a roasting pan combine all ingredients. Toss olive oil, lemon juice, salt and pepper over all vegetables. Make sure the vegetables are thoroughly covered. Roast in the oven at 400 degrees, for up to 45 minutes or until all vegetables are cooked-if vegetables are slightly charred or golden, this will only add to the overall flavor. In a roasting pan combined all ingredients. Combine olive oil, lemon juice, salt and pepper. Toss mixture over all vegetables. Make sure the vegetables are thoroughly covered. Roast in the oven between 375 and 400 degrees, for up to 45 minutes or until all vegetables are cooked-if vegetables are slightly charred or golden, this will only add to the overall flavor. A healthy diet is an essential part of our healing program. Here is one of my favorite dishes, which is not only delicious, but also very healthy. Barbecued whole Snapper Recipe 1) 1 kg (about 2 pounds) whole snapper 2) Salt and pepper 3) 3 garlic cloves chopped (for marinade) 4) 3 garlic cloves minced (for garlic bread) 5) tablespoons chopped fresh basil leaves 6) tbsp chopped fresh parsley 7) 10-12 tablespoons extra-virgin olive oil 8) 1 lemon sliced 9) a few slices Italian bread, cut 1 inch thick 10) Batter Method Preheat a barbecue to medium-high. Clean the surface of the grill with a grill brush. Brush the surface of the hot grill with vegetable oil. Rinse fish inside and out under cold running water. Clean and scale fish and remove excess fins to prevent burning. Pat dry with paper towel. Make 3 shallow cuts,a half of inch-deep, in thickest part of each side of fish. In a medium bowl, add 7 tablespoons of olive oil, salt, herbs, pepper, and 2 garlic cloves (chopped). Put the fish into suitable plate, and add 3 tablespoons of olive oil all over over the fish. Use a little bit of the marinade to the incisions and the center of the fish and season both sides with salt, pepper and oil. Leave it for a half of an hour (till grill is ready). Place the snapper on the preheated grill. Barbecue the snapper, for 20 to 25 minutes (or until cooked through), turning halfway. Mix minced garlic with the batter. Brush bread lightly with this. During last 5 minutes of grilling, place bread around outer edges of grid to toast, about 4 minutes, turning once. Carefully transfer grilled fish to a serving plate. Use the rest of the marinade as a dressing. Serve with the sliced lemon, and garlic bread. Salad: Cut the cucumber in half lengthways and use a teaspoon remove the seeds. Cut in half again lengthways then slice thinly. Combine the cucumber with the tomato, red onion, red capsicum and olives in a medium bowl. Drizzle with Apple Cider Vinegar and Olive Oil. Add salt and pepper. I serve also the potato salad with this. Notes: Tip: When selecting fish, look for bright clear eyes, not cloudy and sunken eyes as this will show you how fresh the fish is.
